Sweet Potato Almond Flour Pizza Crust
Ingredients:
2 cups mashed sweet potatoes (about 3-4 large uncooked)
1 1/4 cups almond flour
2 eggs
Spices of choice
Nonstick space of choice
Pizza sheet or baking sheet
Directions:
Preheat oven to 425 F
On the stove, bring a pot of water to a boil
Peel sweet potatoes
Slice sweet potatoes into inch halves
When water is boiling, add sweet potatoes to water
Cook till they are soft enough to mash
Drain sweet potatoes and place them in a bowl
Mash sweet potatoes together to form a smooth texture
Add 2 eggs to the sweet potatoes and mix together
Gradually mix in 1 1/4 cup almond flour to sweet potatoes and eggs
Add spices of choice
Spray pizza sheet or baking sheet with nonstick spray
Pour sweet potato mixture on pan and smooth to form desired thickness and shape
Bake 30-35 minutes at 425 F

You can add any toppings you would like. Once crust is ready, remove and top as desired. Turn on the broil and add the pizza. Cooking an additional 5-8 minutes.
I will even make the crust then add my toppings and broil them on before I eat...this way I can have breakfast pizza and a variety of other flavors.
