Goat Cheese Stuffed Mini Bell Peppers with Bacon


Ingredients:

  • 7 Mini Bell Peppers (more for a larger batch)

  • Goat cheese (I used a 4 oz container and still had some leftover)

  • 3-4 slices of bacon (more for a larger batch)

Directions:

  1. Preheat oven to 400 F (truth is, unless it is meat, I just cook it at the temperature I'm using for the other sides)

  2. Clean desired amount of mini peppers

  3. Slice mini peppers in half long ways

  4. Lightly grease bottom of peppers (I used bacon grease and rub it lightly on the bottom of the peppers.

  5. Place peppers on a foil or parchment covered baking sheet

  6. Cook peppers 8-10 minutes

  7. Fry bacon in a pan on the stove

  8. Take peppers out of the oven and add about 2 tsp of goat cheese per pepper (I did not soften the goat cheese and just stuffed it on with a spoon- you could always soften it so it would go on easier)

  9. Crush bacon into bits and sprinkle desired amount on the peppers

  10. Place in the oven for 5 minutes

  11. Enjoy!

  • My husband does not like goat cheese and he thought these were pretty tasty....so much so we did not have any leftover.

  • You could always add garlic and other spices to the goat cheese.

  • I paired them with round steak, roasted broccoli and roasted cauliflower.
